Yummy Pancakes made with Oats instead Flour

Hi everyone!

My almost 17 year old daughter introduced the family to a new type of pancake to try today and we enjoyed them so much I just had to share my excitement...and the receipe.

I'm normally a staunch traditionalist when it comes to making pancakes with flour.  So when my daughter said she was making her pancakes with oats and not flour, I was intrigued to say the least.  I'm that type of eater where texture matters...a lot!  So I gotta be honest when I say I was a little hesitant that it would be something I'd enjoy. 

But, oh wrong was I.  They were great and very yummy.  I made them even more yummy by adding sliced strawberries and a few slices of bacon on the side and topped everything off with a generous serving of maple syrup. (I'm also one of those eaters who likes to mix everything together). :)

So without further adieu, here's the receipe for you to try and hopefully you'll enjoy them like we did.  I'd love to hear how it goes for you.  Feel free to share your results in the comments section at the bottom of this article.

 

 

1/2 cup oats

1/2 cup milk (we normally drink skim in our household so that's the version used in our case)

1 egg

1 tsp vanilla

1/2 tsp baking soda

1/2 of one banana

a few dashes of cinnamon

 

Put all of the above ingredients into a blender (my daughter likes to use her Magic Bullet when she makes them) and blend until everything is mixed together.

Pour a portion of the mixture onto a hot skillet and cook each side (the number of pancakes you can make will depend on what size you like to make your pancakes. We tend to make our pancakes on the smaller side and the above amounts generally yields 5-6 pancakes).

Once cooked, serve with your favourite version of pancake syrup, some fruit on top and anything else that you enjoy having as an accompaniment to pancakes.
